I would like to share one of my favorites dine-in menu at Thailand restaurant.
For this recipe, you could use another type of fish if you prefer, but the sea bass
was the best fresh fish available to us at the time. This sweet-sour spicy fish
dish is that simple and yet it left me gastronomically satisfied. This dish
would go well with rice as there is lots of sauce! Find it hard
to believe? Well, give the following sweet-sour spicy recipe a try then!
INGREDIENTS
1 whole fish Sea
bass, cleaned
1 tbsp Corn
flour
7 cloves Garlic,
chopped
2 Holland Onion, diced
15 Thai chilies, sliced
2-inch Ginger, sliced
4 Kaffir
lime leaves, sliced
3 lemongrasses,
sliced
3 tbsp Chili
sauce
2 tbsp Chili
Paste
3 tbsp Oyster
sauce
1 tbsp tomato
sauce
1 tbsp Sugar
1 tbsp Sweet
Soy sauce
1 tsp Fish
sauce
1 tsp Lime
juice
METHODS
Heat oil.
Baste sea bass with cornflour and fry till
golden-brown.
In a separate pan, add oil, garlic, and onions.
Stir fry till fragrant.
Then add chili paste and cook about 5-10 minutes.
Add ginger, chilies, lemongrass, kaffir lime
leaves, sweet soy sauce, chili sauce, tomato sauce, sugar, fish sauce and
oyster sauce, and 1 cup of water. Stir till all ingredients combine and thicken
into a sauce.
Turn off heat and pour lime juice. Stir.
Then pour the sauce over freshly fried fish.
Enjoy the crispy deliciousness of the fish with
steam rice!
