pumpkin? Yes, guys! I really love pumpkin especially this recipe. Pumpkins
aren’t just for carving or pie making. This fruit offers health-boosting
properties. It is also a delicious ingredient for soup, muffins or even
pancakes. Eating more pumpkin will benefit you in a number of ways such as antioxidants,
protects your eyes, improves sperm
quality, reduces inflammation and boosts your magnesium consumption.

Ingredients
½ Pumpkin (about 2KG) - cut into
dice
½ cup sago pearls
1 pandan leaves (tie into knot)
2 ½ tbsp. sugar
1 tbsp. brown sugar
1 tsp. salt
1 small box coconut milk/santan –
I used KARA brand
2 - 3 cups water
Methods
Steam or boil the dice pumpkin
until soft. Once soft, pour into a bowl and set aside.
Now, cook one small box of
coconut milk and 2-3 cups of water with medium heat.
Once it boiled, add the sago
pearls and pandan leaves and cook the sago about 5 minutes or it become translucent.
Stirring it occasionally to avoid the coconut milk become separated from the water.
Then add brown sugar, sugar and
salt. Please taste and adjust as your preferences.
Now, add the steam pumpkin and
slowly stir the soup. If your soup is thick, you can add a little bit water and
taste again. Make sure the soup tastes sweet and a bit salty.
Done!
You can serve this pumpkin soup dessert either warm or put in the fridge for cold taste.

You can remove the sago pearls from the recipe if you don't like it but it tastes better with the sago pearls. It thicken the soup a bit. |
