I
really love spicy foods. I love to cook spicy dishes. Sambal is my favorite especially
sambal from Indonesia such as Sambal Ijo and Sambal Ayam Penyet.
Sambal Ijo has its own distinctive aroma and
flavor because it is made from green chilies. Green chilies taste different
from red chilies. The green color of Sambal does not mean that it’s not as
tasty as other Sambal with red color. Sambal Ijo is a Fairly
Spicy relish,
not so spicy as you imagine because green chili is unripe chili and not yet
grow to the hottest stage!! You can also serve this sambal to accompany fried
side dishes such as deep-fry fish, fried chicken etc. It's simple relish but
taste really delicious!!!!
If
you have low tolerance to spicy food but want to try Sambal, you can choose Sambal
Ayam Penyet as a
starter. It tastes sweet and Not Too Spicy despite of its dark red color. This
sambal has similar ingredients to Sambal Belacan, but with addition of tamarind
extract and nowadays, I noticed that some of seller make Sambal Ayam Penyet quite
hot and use a lots of chilies. So, the recipe I want to share today is the
combination of Sambal Ijo and Sambal Penyet. Let’s check it out!
INGREDIENTS
1 Bowl
of Thai Green Chillies

Red Bird's Eye Chillies
6 Shallots
5
Garlic Cloves
4
Kaffir Lime Leaves
½
Inch Belacan/ Shrimp Paste
1 Tsp
Salt
4
Tbsp. Sugar
1 Pcs
Dry Garcinia Atroviridis a.k.a Asam Gelugur

METHODS
Heat
5 tbsp. Oil and fry green chilies, red chilies, shallots and garlic about 3
minutes until fragrant. Then pound it using a mortar and pestle or grind
coarsely in a food processor.
Using
the same oil, cook the chilies paste.
Add 3
cup of water. And wait until oil floats to the top of the paste because
moisture has
evaporated.
Add salt
and sugar. Season based on your taste.
Later
add the dry Garcinia and the kaffir lime leaves and mix well about 2 minutes.
Done!
You
can served this sambal with hot rice and fried chicken.
